Day 8

I've been on South Beach for 8 days now! The first 2 days were bad with headaches and fatigue but things have evened out now and I feel so much better. I've lost 4 lbs. so far and I'm very excited, just for the mere fact that I've stuck with this for 8 days. 7 more days on Phase 1 and then I'll see how much I've lost. I may do 3 weeks of Phase 1 since I was such a sugar/bread addict. When I get to eat wheat bread it may backfire with me so I'd like to stay bread free for a little while longer:)

I am now addicted to tomatoes and cottage cheese -- love it! Also, I make this roasted chicken breast lunch with lettuce, a tbs. of no-fat sour cream and taco sauce, sprinkled with some shredded low fat monteray jack cheese. Yummy!! I'm done to 1 cup of coffee a day and I have to say that I've eaten 3 meals a day with 3 snacks for the last 7 days.

I was a big meal skipper and instead of making something healthy and filling - I'd grab the quickest thing to eat, which was normally a bagel with cream cheese or some cookies. I'll be honest, I have cheated a bit with a small Entermann's cookie the other day but I only had 1 - geest - I just use eat the whole box!
